4 sirloin steaks, 170 g each
2 tbsp roasted Szechuan pepper
1 box brown shimeji mushrooms
1 box white shimeji mushrooms
1 pack asparagus beans, cut in
half lengthwise
2 tbsp soy sauce
1 tsp sweet soy sauce
1 tsp hoisin sauce
1 lotus root, thinly sliced
Frying oil
Season the meat with Szechuan pepper. Brown the meat in a frying pan until it reaches an internal temperature of 55 degrees C. Leave to rest while preparing the side dishes. Fry the mushrooms and asparagus beans in a pan. When nearly finished, add the soy sauce, sweet soy sauce and hoisin sauce. Heat the oil to approx. 170 degrees C and fry the lotus root until it is crisp. Serve the meat with the mushrooms and fried lotus root.
