Smoked snoek or angelfish kedgeree






400 g smoked snoek or angelfish
(alternative smoked mackerel or chub)
1 large onion chopped
1 tablespoon butter
2 large green chillies, sliced
200 g basmati rice, cooked
300 g cooked baby potatoes
Salt and pepper
Handful fresh parsley, chopped (optional)

Remove all bones from the fish and place aside. Saute the onions in a pan with the butter until translucent, add the chilli and cook for 1 min. Add the potatoes, cooked rice and the fish. Stir until hot. Season with salt and pepper and serve with parsley.
