SCAMPI AND VEGETABLE TEMPURA

METHOD

16 tiger prawns
1 sweet potato, cut into slices
2 oyster mushrooms, cut
into eight pieces
Squash, sliced
Pumpkin, sliced

Batter
2 dl ice-cold water
150 g flour
2 tbsp oil
1 tsp baking powder
1 tsp salt
90 g panko

Chilli Mayonnaise
1 egg
4 dl sunflower oil
2 tbsp sriracha sauce
1 lime, juice
Half a tsp salt

Combine all the ingredients for the batter and leave to stand while you prepare the prawns and vegetables. Dip the vegetables in the batter and fry them until they are crisp and golden. Leave on a piece of paper and sprinkle with salt. Dip the prawns in the batter. Cover in panko and fry until golden. Whip the egg with the salt, sriracha and lime juice. Slowly add the oil for a creamy mayonnaise.
