4 lamb ribs on the bone (Ribbetjies)
Salt and pepper
2 lemon
Preheat your oven to 230 °C
Score the fat on the ribs and rub with the salt and pepper. Place on a roasting tray and sizzle in the oven for 10 mins. Turn down your oven to 160 °C and slowly cook the ribs until golden. When ready to serve, squeeze over lots of lemon juice.
Serve with green salad and perhaps Comins’ pickles (recipe p 235)
