Raw shrimps, green chilli foam

24 raw shrimps, peeled
1 clove garlic, crushed
2 green chillis, finely chopped
1 smal green Thai chilli, finely chopped
1 shallot, finely chopped
1 tsp salt
1 tsp sugar
2 tsp fish sauce
2 dl coconut milk
2 limes, juice
Coriander and mint leaves
1 tbsp fried garlic


Fry the vegetables until they are translucent and bright, but not brown. Add the salt, sugar, fish sauce and coconut milk and simmer for a couple of minutes until the vegetables start softening. Place the vegetables in a blender and blend together. Add the lime juice to taste. Whisk lightly into a foam and pour over the raw shrimps. Top with the coriander, mint and fried garlic.
