Plum and pistachio sponge cake

Sponge cake
160 g eggs, approx. 3 eggs
75 g all-purpose flour
90 g sugar
80 g butter, melted
25 g plum juice

Pistachios
50 g pistachios
2 tbsp water
1 tsp salt
1 tsp dried chilli

Plums
2 plums
1 tsp honey
1 lime, juice

Mix all the ingredients and pour the mixture into an espuma bottle containing 1 cartridge and shake well. Make 3 small holes in the bottom of a paper cup. Fill one half of the cup with the cake mixture and bake one cake at a time in a microwave oven for approx. one minute.

Boil all the ingredients until the water has evaporated. Then bake the pistachios in the oven at 140 degrees C until they are crisp.

Thinly slice the plums and brush with the honey and lime juice.
