Pepper king crab

4 raw king crab legs
2 dl sweet soy sauce
1 dl sugar
1 pot coriander
2 red chillis
60 g ginger, grated
5 cloves garlic
1 dl rice vinegar
1 lime, juice
2 tbsp whole peppercorns, roasted and coarsely ground
4 tbsp butter
1 spring onion, finely sliced
Blend the sweet soy sauce, sugar, coriander, chilli, ginger and garlic into a smooth paste in a blender. Add the rice vinegar and lime juice. Cut the crab with the shell in pieces, approx. 2–3 cm long. Place in a large pot. Add the chilli paste and pepper and simmer for 4–5 minutes. Add the butter and simmer for a further
5 minutes or until the crab is tender. Top with slices of spring onion.
