Passion fruit sorbet with chilli and lime

INGREDIENTS

METHOD

Sorbet
1 litre passion fruit juice
200 g sugar
2 dl light syrup
1 red chilli
3 gelatine leaves


To serve
2 passion fruits
1 tbsp water
2 tbsp sugar
1 box of raspberries

Bring all the ingredients to the boil and add the melted gelatine leaves. Mix with a hand blender and freeze in an ice cream maker.

Bring the passion fruits, water and sugar to the boil, cool and serve with the sorbet and fresh raspberries.
