Oven baked monkfish and mango salad

METHOD

1 monkfish fillet, approx. 800 g
Coarse salt
1 mango, sliced
1 spring onion, sliced
1 squash, sliced
Half a pot coriander, chopped
Half a green chilli, finely chopped
Half a lemongrass stalk, finely chopped
1 tbsp lemon oil
1 tsp sesame oil
1 lime, juice
Fish sauce

Heat the oven to 170 degrees C. Place the fish on top of the salt and bake in the oven for about 40 minutes. Mix the vegetables with the coriander, chilli, lemongrass, lemon oil and sesame oil. Add the lime juice and fish sauce to taste. Top with mango salad.
