Oven baked fish with fermented black beans and garlic

1 whole seabass or similar fish, gutted and cleaned
1 cm ginger, grated
2 tbsp soy sauce
1 tbsp rice wine
4 coriander stalks, chopped
3 tbsp rapeseed oil
Salt and pepper
1 pkt black fermented beans
2 tbsp fried garlic
1 spring onion, strips
Heat the oven to 120 degrees C. Combine the ginger, soy sauce, rice wine, coriander and rapeseed oil. Top the fish with the ginger mix and wrap in baking paper. Bake the fish in the oven for 45 minutes. Serve the fish with the fermented black beans, fried garlic and spring onions on top.
