Mango salad

METHOD

Salad
1 mango
Half a Lebanese cucumber
1 red chilli
Half a shallot
20 g roasted peanuts
4 coriander stalks
4 Thai basil stalks
1 lime

Dressing
2 mangos
1 tbsp honey
1 tbsp lemon juice
Salt and pepper to taste
2 dl olive oil

Thinly slice the mango, cucumber, chilli and shallot. Roast the peanuts in a pan. Combine all the ingredients and add the lime juice to taste.

Blend the mangos, honey, lemon juice, salt and pepper at high speed. Add the olive oil and blend. Cool in the fridge for a couple of hours before serving.
