Kebab kobideh
- grilled minced meat on a spit

METHOD
1 onion
Salt and pepper
1 kg of minced meat
AT A PICNIC YOU MAY SERVE THE KEBAB IN NAN BREAD WITH ONION AND RADISH:
YOU CAN MIX CHOPPED PEPPERMINT INTO THE MINCED MEAT.
1 Grate the onion, squeeze the juice out of it. Mix the salt,
pepper and minced meat with the onion juice and knead well.
2 Roll a lump of minced meat around a spit. Keep your hands moist, then the meat will
not stick to them. Distribute the minced meat evenly and not too much at a time.
The meat should cover the spit, but not the ends of it.
3 Grill the kebab. Turn the spit to achieve even roasting,
before laying the spit down on the grill grate.
4 Serve with grilled tomatoes, rice and saffron.
