Halibut with onion






800 g halibut fillet
200 g small fennel
4 tbs olive oil
1 tbs lime juice
1 tbs coarse-grained mustard
1 tbs red onion, finely chopped
1 tbs dill, finely chopped
2 tbs sweet soy sauce
2 dl reduced beef/veal stock
1 dl white wine
Salt and pepper

Cut the halibut into suitable pieces and bake in a greased roasting
tin (200 °C, 8 minutes). Coarsely cut the fennel and let boil tender
in lightly salted water. Season with salt and pepper. Reduce
the white wine, stock, and soy sauce to a thick sauce. Mix the red onion, mustard, dill, lime juice, and oil. Pour over the fish and serve.

Halve small tomatoes and
bake alongside the fish.
