FRIED PORK AND UDON NOODLES

2 tbsp oil
50 g kale, chopped
2 shallots, sliced
10 shiitake mushrooms
2 pkt udon noodles
2 tsp roasted sesame oil
400 g pork fillet, diced
2 tsp ginger, shredded
1 tsp pink peppercorns, ground
0.5 dl mirin
0.5 dl soy sauce
1 tbsp sesame seeds, roasted
4 eggs
2 radishes
Fry the kale in oil in a saucepan. Add the shallots and shiitake mushrooms and fry until translucent. Boil the noodles according to the directions on the package. Drain and mix the noodles with the kale, mushrooms and onion. Add the sesame oil. Fry the meat with ginger and pink peppercorns. Don´t fry too much of the meat at the same time as this will cool the pan and the meat won´t get a nice, crisp crust. Add the mirin, soy sauce and sesame seeds towards the end. Mix the meat with the noodles and serve with pan-fried eggs and slices of radish.
