Curried eggs

METHOD

2 tablespoons butter
2 onions, chopped
2 tablespoons white flour
1 can (200 ml) diced tomatoes
100 ml water
2 teaspoons malay curry
1 teaspoon apple cider vinegar
1 teaspoon sugar
Salt and pepper
6 hard boiled eggs (peeled)

Heat the butter in a large saucepan and fry the onion until glossy. Add flour while stirring, and then add tomatoes and water. Bring to the boil and add curry, vinegar, sugar, salt and pepper. Let it simmer for 10 minutes.
Heat eggs in the sauce and serve.

Garnish with fresh cilantro and serve with papadums on the side!
