Carrot and orange salad
INGREDIENTS

METHOD
2 large carrots, peeled and grated
2 large oranges, peeled and chopped
2 tablespoons lemon juice
2 tablespoons olive oil
Salt and freshly ground black pepper
2 snipped spring onions, to garnish
Mix all the ingredients, except the spring onions, in a large salad bowl and set aside in the fridge.
Garnish with the spring onions before serving.
