Braised pork ribs

METHOD

1 pork loin rib, skin off
2 dl sweet soy sauce
2 dl soy sauce
1 lime, juice
1 cm ginger, finely chopped
1 clove garlic, finely chopped
1 red chilli, finely chopped
2 green apples
1 pot coriander
2 tbsp Bacon Crisp, crushed

Heat the oven to 150 degrees C. Place the meat in an oven dish. Combine the sweet soy sauce, soy sauce, lime juice, ginger and chilli. Cover the meat completely with the sauce. Bake in the oven for about 1.5 hours. Leave the meat to cool in the sauce.
Peel the apples and cut some thin slices. Dip the slices in boiling water and cool in ice-cold water. Boil the remaining apples until they are soft then mash them. Cover the apple slices with the apple sauce and fold into a star shape. Serve the meat with the apples and top with coriander and Bacon Crisp pieces.
