Banh Cam with passion fruit and chilli curd

130 g rice flour
20 g all-purpose flour
45 g sugar
0.5 tsp salt
5 tsp potato flour
1.2 dl water
1 tsp baking soda
Sesame seeds


Passion fruit and chilli curd
3 passion fruits
Half a red chilli, finely chopped
2 tbsp lemon zest
150 g cold butter, diced
250 g sugar
4 eggs


Mix all the ingredients, except for the sesame seeds, into a smooth dough. Make small balls and roll them in the sesame seeds. Fry in a fryer at 165 degrees C for approx. 7 minutes until they are golden.


Combine the passion fruit, chilli, lemon zest, butter and sugar in a glass bowl. Place the bowl over a pot with nearly boiling water. Heat carefully while stirring until the butter has melted and the sugar has dissolved. Add the eggs one at a time and keep stirring for about 30 minutes until the cream starts to thicken. Dip the balls in the chilli curd.
