Sea urchin tapas






4 sea urchins
1 avocado
10 basil leaves
1 tbs lime juice
Salt and pepper

Pimiento oil:
1 pepper
5 small pimientos
1,5 dl olive oil

Open the sea urchins and extract the roe. Halve and pit the avocado. Scoop out the flesh with a spoon and cut it into chunks. Mix roe, avocado, coarsely torn basil leaves, and lime juice in a bowl.

Season with salt and pepper.

Chop the pepper and the pimientoes into small pieces. Fry in oil for about 30 minutes. Drain well and discard everything but the liquid.
