METHOD

1 kg of dates
200 g of walnut kernels
400 g of unsalted butter
2 1/2 of wheat flour
100 g of icing sugar
1 spoonful of cinnamon
1 teaspoon of caraway
50 g of chopped pistachio nuts

1 Remove the seeds and stuff the dates with walnut kernels.
2 Heat half the butter in a saucepan. Add the flour and stir until the mixture has achieved a reddish-brown colour. Remove the saucepan from the hotplate, add the remaining butter, add the icing sugar, stir well.
3 Pour one half of this yoghurt-like dough onto a platter, and distribute with a spoon. Then spread the dates all over the hot dough. Pour the remaining dough on top of the dates. Sprinkle the cinnamon, caraway and chopped pistachio nuts over the dough while it is still hot.
4 Let the dessert cool and cut it into small squares.
