Peri-peri prawns





1 teaspoon olive oil
4 green chilli, sliced
2 cloves garlic
8 large prawns, deveined and head on
2 teaspoons melted butter

In a large skittle, heat the oil and add the chillies and garlic, stirring so that they do not colour.
Add the prawns and fry for one minute on each side.
Add the melted butter and cook the prawns until just opaque. Season with salt and serve immediately.
Serve together with good quality rice and fresh cilantro as garnish. Don’t forget to serve the left over butter from the pan as a tasteful sauce!
