Koko sibzamin - potato pancakes
500 g of potatoes
Salt and pepper
1 spoonful of wheat flour
1 teaspoon of baking soda
1/2 teaspoon of cinnamon
Cooking oil for frying
Chopped sweet peppers
SERVE WITH SALAD AND BREAD.
MAY ALSO BE SERVED WITH BOILED POTATOES.
THE PROCEDURE IS OTHERWISE THE SAME.
Peel the potatoes and grate them roughly. Add the salt, pepper,
wheat flour, baking soda, and cinnamon. Add the eggs and mix well.
Heat cooking oil in a Teflon frying pan. Make small cakes from the
mix using a spoon, and place the cakes in the frying pan.
The cooking oil should be really hot before you place the cakes in the pan.
Fry the cakes on both sides and place them on a platter. Garnish with the sweet peppers and lemon quarters.
