Salt and pepper
Cooking oil for frying
4 chicken fillets
1/2 teaspoon of curry
1/2 teaspoon of cinnamon
1 dl of water
1 tin of chopped tomatoes
The juice of half a lemon
AN AUBERGINE CASSEROLE IS NUTRITIOUS FOOD WHICH TASTES GREAT. YOU CAN MAKE THIS CASSEROLE WITH LEG OF LAMB IF YOU LIKE, BUT THE LEG OF LAMB MUST BE THOROUGHLY COOKED BEFORE THE AUBERGINES ARE ADDED A VEGETARIAN MAY MAKE THIS DISH WITHOUT
MEAT, OF COURSE.
1 Peel the aubergines, slice them into three slices sideways. Add salt and let the slices stand for ten minutes. Then rinse the slices well in cold water to remove the salt. Dry them off with a clean tea towel. Then fry the slices in oil. Heat the oil and fry the aubergines at a high temperature until they achieve a light brown colour. Place the aubergines on a slanting platter to allow the superfluous oil to run off
2 Cut each chicken fillet into three pieces. Fry them in oil with the onion, curry, cinnamon and turmeric. Add the water and mashed tomatoes. Add the salt and pepper. Let simmer for 5 minutes.
3 Place the aubergines very carefully in the chicken casserole. Boil at a low temperature for 30 minutes.
Do not stir, as the aubergines may split.
4 Add lemon juice to your liking, serve with rice and salad.
